UK-based Thomas the Baker has recently made a strategic investment in a Koenig Combiline to keep up with the increasing demand from customers. With 29 bakery shops in Yorkshire, the family-owned business prides itself on serving freshly baked goods, including its award-winning curd tarts, sausage rolls, and Helmsley H’eccles cakes. The Koenig Combiline, supplied by EPP, is able to produce up to 9,000 rolls per hour in the Helmsley bakery, enabling Thomas the Baker to supply its shops from Selby to Scarborough.

Previously, Thomas the Baker used an older version of the Koenig line that had poor efficiency and outdated features. EPP had been servicing and maintaining it, but it became increasingly difficult over time due to obsolete parts. After a few months of using a makeshift solution, the company decided to upgrade to a new machine to meet their current and future needs.

The new Koenig Combiline offers flexibility and enables the bakery to produce a wider range of quality products. The dough can rest as part of the process, which means the bakery can produce additional products such as hot dog rolls and half baguettes. The line is also capable of producing batched products such as hot cross buns and teacakes. With the press of a button, the weights, moulding, and settings can be recalled, which ensures consistency and increases efficiency.

Before making the purchase, EPP arranged for the team at Thomas the Baker to visit a Scottish bakery to see a similar EPP-supplied Koenig Combiline. Additionally, a master baker from Koenig visited the bakery, and the team from EPP provided training and support for on-site engineers to help maximize efficiency and production.

Thomas the Baker has been a long-standing customer of EPP, with various baking equipment supplied over the years, including MIWE roll-in ovens, a Comas DV depositor, and a Comas pie line. The bakery prides itself on using locally sourced ingredients, with approximately 65% of its ingredients coming from local sources, ensuring high-quality, fresh products.
