Puratos has inaugurated a new Flour Competence Center at its headquarters in Groot-Bijgaarden, Belgium, creating a specialized facility for bakery and patisserie manufacturers to gain insights into managing one of the most unpredictable raw materials in the sector: flour.
This center aims to assist clients in ensuring consistent product quality as factors such as climate change, evolving agricultural methods, and global supply demands increasingly influence flour behavior.
Flour variability is a crucial concern for producers, as changes in protein levels, enzyme activity, moisture content, and water absorption can drastically impact dough handling, fermentation, and the overall quality of the finished product. Even minor changes can destabilize processes, particularly in high-volume or uniform bakery settings. With the inherent unpredictability of each wheat harvest, producers are increasingly reliant on data-driven, predictive insights regarding flour behavior in their production processes.
The newly established research center combines cutting-edge analytical tools, specialized research and development expertise, and a worldwide network of interconnected flour laboratories. Customers can expect several tangible advantages from this initiative:
Enhanced flour analysis and interpretation will equip producers with knowledge on how unique flour attributes affect dough performance and final product results.
Predictive, data-driven support will utilize global crop information, sophisticated analytics, and innovative GenAI-based modeling to foresee variability before it impacts production.
Application-centric solutions will align flour data with baking outcomes, enabling Puratos to refine its bakery enhancers, sourdoughs, and patisserie mixes, assisting clients in achieving consistency across fresh, frozen, and long-shelf-life products.
Commitment to regenerative agriculture will involve assessing how regenerative flour performs in final products and creating solutions that enable bakers to merge sustainability objectives with operational dependability.
A global perspective with local application ensures that the center is digitally linked to flour laboratories worldwide, allowing Puratos to integrate global data sets with regional crop insights to customize solutions for local customer needs.
Looking ahead, the center is set to spearhead research into crop advancements, new stabilizing ingredients, and next-generation flour analysis methodologies. The findings will funnel directly into Puratos’ product development processes, guaranteeing customers receive continually updated solutions that reflect current flour behavior.
Paul Baisier, the Chief R&D Officer at Puratos, highlighted the significance of this initiative for the industry: “Flour forms the base of most bakery recipes, yet it is one of the most complex and variable raw materials in the industry. With our new Flour Competence Center, we leverage global data, advanced analytics, and GenAI-driven predictive modeling to better understand and anticipate flour variability, translating insights into practical solutions for our customers.”
