With SIAL Paris 2026 scheduled for 17–21 October at Paris Nord Villepinte, the international food sector is preparing to celebrate the 30th anniversary of SIAL Innovation.
Recognised as a leading international platform for food technology and culinary development, the 2026 programme will give professionals an inside view of the ingredients, products, and concepts influencing the future of food. It will also provide valuable insight into food and beverage industry trends, food manufacturing trends, and food and drink consumer trends.
What attendees can discover
- An extensive innovation showcase: visitors will be able to examine 775 selected products drawn from more than 2,750 entries submitted worldwide. The display reflects renewed momentum and creativity throughout the agri-food sector.
- Product sampling at SIAL Taste: guided sessions led by professional culinary specialists will allow guests to try more than 100 shortlisted products and experience emerging food concepts first-hand.
- Live insight at SIAL Live: industry executives, researchers, and creative thinkers will meet in a new interactive setting for presentations, trend analysis, and discussions about the future of the market.
- A robust judging framework: every submission is assessed through a two-stage process involving specialist market juries and a senior Grand Jury, ensuring that the strongest innovations receive recognition.
Key developments and themes to explore
The anniversary programme reflects the significant evolution of consumer expectations. Exhibitors will highlight vivid visual appeal, unexpected textures, added health benefits, and packaging designed to improve convenience and efficiency. These developments connect closely with food processing technology, food and drink packaging, and wider food and drink sustainability priorities.
Although the category winners have been announced, the final Gold, Silver, and Bronze awards will be revealed at the exhibition, together with the Public Choice distinction and press-selected favourites. SIAL Paris 2026 will therefore offer an important sourcing opportunity for buyers, an introduction to more than 650 start-ups, and a comprehensive view of global food and drink industry innovation.
Exploring the SIAL Start-up Village
Entrepreneurs and investors seeking the latest developments in food technology will find the Start-up Pavilion, anchored by the SIAL Start-up Village, at the centre of the event’s emerging innovation activity.
- A global start-up community: more than 650 food-tech and agri-food businesses from around the world are expected to participate.
- A dedicated exhibition area: approximately 150 early-stage companies will present solutions covering alternative ingredients, food waste prevention, traceability, automation, and related applications.
- The SIAL Pitch Area: this lively presentation stage will give founders an opportunity to meet investors, commercial buyers, and potential strategic collaborators.
- Expert-led discovery tours: registered visitors can join one-hour themed tours of the start-up zone, making it easier to identify disruptive technologies and engage directly with company founders.
The SIAL Innovation Competition and its categories
Marking three decades of achievement, the SIAL Innovation competition evaluates products across several criteria, including formulation, packaging and presentation, market positioning, and production methods. The 2026 selection illustrates important developments in food and drink innovation, food and drink marketing, and sustainable product development.
- Upcycled and circular ingredients: Kunana’s Unsweetened Banana Milk received the Gold award for converting whole bananas that would otherwise be rejected into a nutritious, sustainable plant-based drink.
- Health-focused products and new textures: The Retailers’ Favorite award went to Lion’s Mane Mushroom Steak from Lion’s Mane Mushrooms Company. This fully plant-based steak is marinated in black garlic to deliver a pronounced umami profile. Other notable finalists included allergen-free plant-based salmon fillets and lupin coffee.
- Lower-impact packaging: Les Beurrés earned the Bronze award for flavoured butters presented in 100% Recyclable Aluminum Capsules. The format combines premium convenience for retail and foodservice with reduced packaging waste.
Clean-label condiments: La Terre du 9’s Black Garlic Sauce won Silver by offering a contemporary take on a soy sauce-style condiment made with only four straightforward, allergen-free ingredients. Together, these examples demonstrate how product developers are responding to food and drink regulations while advancing food distribution trends and changing customer expectations.
