Planteneers and Handtmann have announced a collaboration to produce marbled steaks and bacon with meat and fat layers in plant-based products, setting new standards in the classic meat segment.
By combining functional systems from Planteneers and equipment from Handtmann, manufacturers of plant-based meat alternatives now have the capability to create marbled pieces with a fine fibrous structure.
The partnership has resulted in the development of a new attachment for Handtmann’s familiar filling and portioning systems, along with the necessary system solutions from Planteneers’ fiildMeat and fiildTex series. These solutions serve as the foundation for producing meat and fat alternatives with a flexible coextrusion system.
The resulting products can serve as plant-based alternatives to steak, filet strips, or bacon, with the size, shape, and fat layers all customizable to meet customer preferences. Asymmetrical fat marbling is also possible depending on the fat ratio and machine setting.
Compared to existing production processes for marbled meat alternatives, such as 3D printing, the collaboration offers a major advantage in terms of output. With a throughput of over a ton per hour, manufacturers can meet the demand for larger quantities of steak alternatives from trade partners.
