British-owned cocoa brand Food Thoughts is expanding its horizons beyond its deep-rooted cocoa heritage with a significant rebranding effort and a premium line of home baking products, aiming to capture a larger segment of a sector it views as primed for innovation.

The company is presenting its latest offerings not merely as a new range of cake mixes. With a revitalised brand image, fresh packaging, and three distinct product lines, Food Thoughts is setting its sights on an ambitious objective: to become the leading British-owned brand in the home baking market.

This initiative signifies a notable growth phase for a company primarily recognised for its high-quality Organic Cocoa Powder and Organic Cacao Powder. The new offerings will debut exclusively at Sainsbury’s starting in mid-August, featuring five new products reaching up to 440 stores nationwide.

The new collection includes Beautiful Chocolate Cake Mix and Beautiful Ginger Cake Mix, each priced at £4.50 for 400g, as well as Velvety Chocolate Flavour Frosting and Velvety Vanilla Flavour Frosting at £3.95 for 400g. Food Thoughts is also enhancing its chocolate selection by introducing Milk Chocolate Chips, crafted from 41% single-origin Colombian cocoa, in addition to its existing 70% Dark Chocolate Chips.

Identifying a gap in the market, Food Thoughts aims to broaden the audience of home bakers and inspire current enthusiasts to bake more often.

This challenge is reflective of a larger trend within the category. Although consumers are willing to pay premium prices for baked goods from cafés and bakeries, cake mixes are often associated with convenience rather than quality, typically seen as suitable only for infrequent baking sessions like children’s activities, school functions, or last-minute gatherings.

Food Thoughts perceives a chance to create a refined premium segment, infusing home baking with the same quality indicators, origin stories, and ingredient standards familiar in other grocery categories.

“We are appealing to a new breed of baker,” states Jason Kerr, joint managing director at Food Thoughts. “When we acquired Food Thoughts, we weren’t looking to launch just another cake mix. We saw an opportunity to redefine what people expect from the category.”

The company believes that a mere 20% increase in baking frequency could contribute approximately £30 million to the sweet baking sector, presenting a significant growth opportunity for both retailers and the brand.

“We believe that if we can make baking simpler, more enjoyable and deliver results people are genuinely proud of, we can encourage them to bake more often,” adds Kerr.

The newly developed products are the result of collaboration with professional chefs, utilizing recipes that have been tested in various hospitality settings such as hotels and restaurants.

This strategy is pivotal for Food Thoughts. The brand aims to combine the consistency demanded in professional kitchens with convenience for home bakers, instead of presenting these elements as opposing forces.

Consumer feedback from 2,586 Food Thoughts customers indicates that 73% are open to purchasing a ready-to-use cake mix. Research identified time constraints, mess, waste, and uncertainty about the final product as primary barriers to baking more regularly.

To address these concerns, the new mixes are designed to require only oil and water. By eliminating eggs and streamlining the ingredient list and preparation process, Food Thoughts aims to minimise costs, waste, and cleanup while also reducing the risk of inconsistent results.

The company has ensured that the mixes maintain consistent outcomes even with variations in preparation and mixing times, specifically catering to those less confident in their baking skills.

Food Thoughts applies a similar philosophy to its ready-made frostings, pinpointing taste and texture as critical areas where current offerings might not meet consumer expectations.

“Consumers are increasingly willing to invest in products with better ingredients and exceptional flavour, and they rightly expect those same standards from the products they bake with,” explains Kerr.

Mark Gould, joint managing director at Food Thoughts, contends that the perceptions surrounding scratch baking versus prepared products require reevaluation.

“One of the biggest misconceptions about ready-made cake mixes and frostings is that they’re somehow inferior to baking from scratch,” he asserts. “The reality is that professional chefs have relied on premium mixes for years because they need consistency.”

The offerings are not meant to stifle creativity in baking; rather, Food Thoughts envisions its products as reliable foundations that allow bakers to personalize their creations with unique flavours, fillings, and decorations.

Consequently, the rebranding effort is as crucial as the product launches. Food Thoughts is transitioning from a specialized cocoa identity towards a more comprehensive home baking brand, while maintaining the quality, ethical sourcing, and ingredient integrity that has built its loyal customer base.

The goal is to implement a tiered product structure—“good, better, best”—that the company believes has been absent in the home baking sector.

For retailers, this development could hold significant importance if it successfully lures in consumers who currently do not engage with the cake mix segment.

“Retailers aren’t looking for another cake mix. They’re looking for something that brings new shoppers into the category,” asserts Gould. “That’s been our focus from day one.”

The challenge will now be to translate this positioning into lasting consumer behaviour. Food Thoughts is confident that by combining premium ingredients, professional-grade performance, and enhanced convenience, home baking can evolve from a compromise into a more accessible premium experience.

“We haven’t developed this range to compete for the same customers,” emphasises Kerr. “The opportunity is in encouraging more people to bake, and helping existing bakers bake more often.”

For Food Thoughts, this rebranding signifies a strategic shift aimed at redefining home baking in terms of quality and accessibility, ultimately transforming an established cocoa brand into a significant player within the British grocery landscape.
