Rubicon expands its product range by acquiring Lucky Spoon Bakery, now offering gluten-free options Rubicon Bakers Food and Beverage Business
US-based Rubicon Bakers has ventured into the gluten-free market by acquiring local peer Lucky Spoon Bakery.
Lucky Spoon produces gluten-free items like cakes, cupcakes, and cookies, distributed in the US grocery channel through chains such as Kroger, Albertsons, and Whole Foods Market.

Rubicon’s CEO, Sebastian Siethoff, expressed the company’s commitment to meeting the evolving needs of consumers with specific dietary requirements and preferences.

The addition of gluten-free products complements Rubicon’s existing portfolio of clean-label, nut-free, and vegan baked goods.

Pam Schulte, the founder of Lucky Spoon, will join Rubicon’s leadership team to further the mission of changing perceptions about gluten-free food. Headquartered in Salt Lake City, Utah, Rubicon has been a B Corp-certified business since 2012, focusing on employing individuals facing social barriers to employment.

With the addition of Lucky Spoon, Rubicon now boasts a portfolio of three brands: Rubicon Bakers, Just Desserts, and Lucky Spoon.

In a related industry development, Promise Gluten Free announced plans to enhance its presence in the US market in pursuit of exceeding €60m in sales.
