Sustainable condiment innovator Rubies in the Rubble is making waves in the UK food sector this summer with its eco-friendly approach.
Driven by the bold principle of “Condiments. But Gooder.”, this certified B Corporation is broadening its acclaimed product line by unveiling three exciting new offerings aimed at reducing global food waste, all while delivering exceptional taste.
Set to debut on Ocado on June 17, 2026, this new collection represents a significant achievement for the brand. It features a sweet and spicy Hot Honey Sauce (RRP £4.20 for 250ml), as well as a vibrant Habanero Hot Sauce and a zesty Jalapeno Hot Sauce (both RRP £3.00 for 250ml). In alignment with the company’s mission, these sauces are crafted from high-quality ingredients that would have otherwise been wasted due to the rigorous standards imposed by retailers or excess supply chain predictions.
A Tangy Boost for Sustainable Dining
The new product line skillfully combines robust flavors with surplus vegetables to enhance everyday meals:
- Hot Honey Sauce: A delightful “swicy” blend of 100% pure honey and the intense heat of fermented red-hot peppers, perfect for drizzling over pizzas, wraps, and summer salads.
- Habanero & Jalapeno Hot Sauces: Enriched with rescued pears, carrots, and fermented peppers, they present a sweet flavor profile with varied heat levels, making them ideal for complementing a Sunday roast or elevating breakfast eggs.
Discovering Value in Surplus
With nearly one-third of all global food going to waste—contributing to 7% of worldwide greenhouse gas emissions—Rubies in the Rubble has been transforming the food system since its inception in 2012. By forming partnerships with farmers to repurpose their surplus, the brand has successfully salvaged an astonishing 10.7 million fruits and vegetables, preventing the release of over 1 million kg of CO2 emissions.
Founder Jenny Costa, inspired by witnessing the large volumes of usable produce thrown away at London wholesale markets, expressed her enthusiasm for the new products: “Rubies has you covered for classic table sauces, now we’re taking things up a gear with tangy, fiery hot sauces and sweet, spicy hot honey; each bottle rescues produce that was destined to be wasted and adds a flavor punch to elevate your everyday dishes.”
Responding to Consumer Demand for Progress
This launch coincides with a shift in consumer behavior towards conscious consumption, moving from a niche interest to a widespread expectation. Recent studies reveal that 85-90% of Gen Z and Millennials believe brands should take clear stands on social and environmental matters. By providing transparency, authenticity, and a direct solution to food surplus, Rubies in the Rubble demonstrates that making sustainable choices doesn’t mean sacrificing flavor.
From humble beginnings at local markets in 2012 to prominent placements in stadiums and partnerships with major retailers such as Tesco, Co-Op, and Ocado, Rubies is showing that there is always potential and taste to discover in what society tends to overlook.
