FaTRIX, a protein-based alternative to butter and animal fat in pastries and bakery products, offers numerous environmental benefits. FaTRIX contains 80% less saturated fat than animal fats, with no trans fat at all. The product still offers the health benefits associated with fat and a low-saturated fat option. As Itai highlights, FaTRIX comprises 50-70% oil, providing energy, and enabling the absorption of oil-soluble vitamins. FaTRIX retains the desirable properties of fats with high levels of saturated fatty acids.

FaTRIX aims to provide customers with the texture and taste of animal fat in bakery products, which has been a long-standing challenge. Margarine and tropical oils have failed to deliver the texture and taste of butter, while demonstrating a poor nutritional profile. However, trials and tests have highlighted that FaTRIX provides desirable taste and texture aspects. Gavan Technologies has incorporated FaTRIX into bakery products, and feedback is positive. Customers are satisfied with the mouthfeel, texture, and taste of BaTRIX baked goods.
