Transforming Food with Artificial Intelligence and Big Data Biology: Unilever's Approach Food and Beverage Business

Artificial intelligence capabilities have seen significant growth in the past year, with generative AI tools gaining popularity. Major food and beverage companies like Unilever are utilizing AI-powered technologies to enhance their product portfolios. Unilever has been using AI for over a decade and is leveraging big data and AI to transform the food and beverage industry.

Unilever recognizes the importance of AI and big data in gut microbiome research. They believe that understanding the interactions between the body and the gut microbiome is crucial in advancing scientific fields. Through access to large-scale data, machine learning, and high-performance computing, Unilever is able to make connections that would not be possible through human brainpower alone.

The gut microbiome plays a key role in human health and wellbeing, with around 90% of health issues having some connection to it. Unilever has partnered with microbiome experts at Holobiome to identify food and beverage ingredients that can positively impact mental wellbeing through the gut-brain axis. By using AI and big data, they aim to uncover the secrets of the gut microbiome and develop health-beneficial products.

Unilever is also using AI and digital modeling to work smarter in new product development and factory formulation. Through in silico testing, they can analyze millions of flavor combinations in a short time, leading to the creation of innovative products. Unilever has used this approach to develop low salt bouillon cubes and vegan mayonnaise, among other products. They also use AI for portfolio analytics and reformulation, allowing for faster adjustments in the supply chain.

Biotechnology is at the heart of Unilever’s fermentation-derived product and ingredient portfolio. By combining digital capability with scientific understanding, they optimize the use of biotechnology in their products. Unilever is committed to expanding its plant-based food offerings and has entered into a supply agreement with mycoprotein producer ENOUGH. They aim to achieve €1.5bn in sales from plant-based food products and are continuously expanding their plant-based portfolio.

Overall, Unilever is harnessing the power of AI, big data, and biotechnology to transform the food and beverage industry. They believe that these technologies can unlock new possibilities in scientific research, product development, and sustainability.
