To gain insights into ingredient innovation and consumer trends in the dairy alternative space, DairyReporter spoke with ingredient companies ADM, Beneo, and ofi. While the alt-dairy category now includes cell-based and precision-fermentation dairy, plant-based dairy alternatives are established and growing rapidly. Increasing the nutritional value of plant-based products, combined with delivering pleasant taste and texture, remains a top priority. Health, sustainability, and wellness concerns are also critical factors, motivating plant consumers to purchase dairy alternatives. Flexitarians remain a key target group, with high demand for plant-based products that meet consumer expectations of similar taste and texture to traditional dairy along with a better nutritional profile. Clean labels are also a key aspect of differentiation that manufacturers can pursue, catering to consumers’ expectations for minimal processing and additives. The alternative protein industry must address concerns regarding costs, from production to consumer consideration, to remain competitive and steady growth.
