The organisers of Evolio Expo have revealed the main themes for the third edition of the B2B extra virgin olive oil (EVO) exhibition. The event will run from 28 to 30 January 2027 at Fiera del Levante in Bari, Italy.
Based on the central theme “Oil is Innovation,” the 2027 edition will explore how digital tools, advanced technology, traceability systems, and effective communication can create a more transparent, sustainable, and competitive olive oil supply chain. These priorities reflect wider food and beverage industry trends, including the growing role of food processing technology, responsible sourcing, and data-led consumer engagement.
Making the olive oil journey more transparent
One of the exhibition’s key areas of focus will be helping producers provide greater visibility from harvest to purchase. Modern tracking solutions, including blockchain, can record each stage of an olive’s journey, from cultivation and milling to packaging and retail. This enables consumers to access verified technical and historical information about the product they are buying.
“The key is certainly information: the ability to enable consumers to be increasingly well-informed, in detail, about a product’s history,” explains Luigi Fino of Confconsumatori Puglia.
By combining digital traceability with transparent food and drink packaging and precise product communication, Evolio Expo 2027 will demonstrate how olive oil businesses can verify authenticity, strengthen trust, and compete more effectively in global markets. The approach also connects with emerging food and drink consumer trends, as buyers increasingly seek reliable information about provenance, production, and quality.
Building global competitiveness through consistent quality
The programme will also examine the importance of standardised production methods, advanced milling equipment, and robust quality assurance systems. Together, these measures can help producers improve consistency, limit errors, and increase the international competitiveness of regional olive oil.
Vincenzo Laudadio, vice president of ADUSBEF Puglia, highlights the value of applying reliable production procedures and repeatable control systems across the sector.
“If you apply this production model, you can go anywhere in the world… This is how our olive oil, not just from Puglia but from all of Italy, can establish itself as one of the true hallmarks of ‘Made in Italy’ excellence around the world,” notes Laudadio.
Discussions will further consider how olive mills are evolving by combining traditional expertise with modern extraction equipment. The event will also support stronger food and drink regulations designed to protect producers that invest in demanding quality standards and responsible practices. These issues sit alongside broader food manufacturing trends and developments in food and drink sustainability.
A dedicated B2B platform for Mediterranean olive oil
Senaf is organising Evolio Expo 2027 on behalf of Nuova Fiera del Levante. Alongside “Oil is Innovation,” the exhibition will feature two complementary themes: “Oil is Health,” which will address nutrition and wellbeing research, and “Oil is Tourism,” which will promote oleotourism and the cultural heritage of olive-growing regions.
Across the three-day programme, attendees will have access to:
- B2B meetings and conferences: Curated business meetings, expert discussions, and technical sessions will connect olive oil producers with institutional stakeholders and buyers from international markets.

- International market development: Following the previous edition’s attendance of 6,720 visitors, 150 exhibitors, and 50 international buyers representing 16 countries, the 2027 show will seek to strengthen Bari’s position as a leading commercial meeting point for Mediterranean extra virgin olive oil.
With its focus on innovation, origin, quality, and market access, the event will also provide insight into wider food and drink industry innovation, food distribution trends, and evolving food and drink marketing strategies across the sector.
