Co-op is taking significant steps to enhance the quality of its own-label British bacon range, becoming the first major UK retailer to reduce the amount of nitrite preservative by 60%. Nitrites have long been used to cure bacon, but this reduction will apply to 24 fresh, British Co-op lines, including their premium tier, encompassing back and streaky bacon, medallions, bacon chops, and lardons.
Importantly, this retailer-led initiative will not result in any additional costs for consumers. Starting this month, Co-op will introduce reduced nitrite bacon in 11 core lines, followed by 13 premium lines later in 2020.
Breige Donaghy, the Director of Delicious Food at Co-op, emphasized the company’s commitment to making positive changes for their members and customers. As a socially responsible retailer, Co-op recognized the concerns raised by shoppers and heeded guidance from industry experts regarding nitrite levels in cured meats. By collaborating closely with their supplier, Tulip, Co-op was able to reduce nitrites by 60% while maintaining preservation standards and delivering a high-quality product.
Zoe Bruce, Customer Director at Tulip, lauded Co-op’s customer-centric approach, noting that it distinguishes them from other major UK retailers. Instead of offering a specialized “nitrite-free” option that may only be accessible at a premium price point, Co-op has worked earnestly to offer a lower nitrite range across their entire own brand bacon category.
Completely removing nitrites would compromise the taste and quality expected from bacon. Therefore, Co-op and Tulip have carefully reduced nitrites in bacon products to a level where the distinctive characteristics of bacon are preserved. Customers will notice no impact on preservation, texture, or appearance, ensuring an enjoyable eating experience.
