The production of Parma Ham is steeped in tradition and is subject to strict quality control at every stage. However, the current packaging – a multi-layer plastic film – is not sustainable and conflicts with modern trends towards environmental responsibility and circular economy. The Parma Ham Consortium, which represents 140 producers and protects the traditional processing method, has conducted research to test alternative and more sustainable materials.

“We are committed to reducing the environmental impact of our production activities,” said Consortium President Alessandro Utini. Working with the Experimental Station for the Parma Food Conservation Industry, the group conducted tests on packaging made from various sources, including paper, recyclable PET, and compostable bioplastics. The packaging was used for trials with Parma Hams from different producers and maturation periods.

The tests yielded positive results, with the paper tray and paper top packaging outperforming traditional materials in terms of preservation performance and durability. Other materials also performed well, with the PET tray suitable for sale in transparent packaging and compostable bioplastics compatible with a takeaway format.

The move towards sustainability comes as Parma Ham sales have surged during the pandemic. In 2021, a record 72 million trays were exported from Italy, an increase of 3% from the previous year. More than 90 million packs were sold globally in 2022, surpassing figures from 2019.

“The research has successfully identified valid alternatives to traditional packaging and has provided manufacturing and packaging companies with important tools to support their already substantial commitment to sustainability,” said Utini.

The transition to alternative and sustainable packaging materials will take time and require commitment, but it is both desirable and finally possible. The Consortium hopes that the alternative materials studied can replace traditional packaging in the near future.

The environmental sustainability and circular economy of Parma Ham are integral to the Consortium’s role in safeguarding the traditional production method. The research is now available to all members, who can decide on its implementation.
