As the founder and CEO, Klein spearheaded the development of an AI-powered algorithm capable of determining the objective sweetness of a product. This groundbreaking technology allows taste to be digitized. MAMAY achieves this by utilizing laboratory equipment to conduct physical and chemical testing on various food and beverage products, analyzing the molecules within them.

By understanding the impact of these molecules and how they influence taste and smell when combined, MAMAY can objectively map the sweetness profile of different products. Recently, the company unveiled its first Software as a Service (SaaS) platform, which offers an objective simulator of product taste, odor, and texture. With over 70 eligible sweeteners in food and beverages, the platform can accurately quantify the impact of sweetness.

To manage the vast amounts of data required for digitizing taste, MAMAY employs artificial intelligence. This cutting-edge technology has the potential to replace sensory panels in some aspects. While sensory panels would still be necessary to determine consumer preferences, MAMAY’s AI-powered algorithm takes care of the rest.

The start-up has already formed partnerships with businesses operating in the water, coffee, milk, and tea sectors. These companies can leverage the platform to determine the taste of their own products as well as those of their competitors. However, sweetness is only the beginning, according to Klein. In the coming months, MAMAY plans to expand its services to include saltiness, bitterness, sourness, and spiciness.
