The E-Bake G2 represents a cutting-edge electric industrial baking oven from GEA, promising enhanced process control and significant energy efficiency for food manufacturing.

According to GEA, the E-Bake G2 has been designed to meet the evolving demands of environmentally friendly food production, thereby marking a significant shift away from gas-based technologies.

This second-generation oven caters specifically to cookies (both soft and hard dough) and crackers, providing a compact footprint, advanced airflow design, and remarkable modular flexibility. Its configuration is optimized solely for electric operation—eliminating gas integration—which leads to substantial reductions in CO₂ emissions while ensuring consistent, precise baking outcomes.

A modular architecture is pivotal to the oven’s performance, allowing for individual control over each baking zone. Consequently, manufacturers can finely tune baking parameters to fit product requirements, which in turn enhances energy efficiency and baking uniformity.

The redesigned baking chamber features a reduced internal volume that minimizes heat loss and positions heating elements closer to the product, effectively improving thermal efficiency. Additionally, the implementation of micro-convection technology, characterized by localized airflow systems, guarantees uniform heat distribution while minimizing temperature gradients across the baking surface.

Furthermore, thermal bridges—pathways through which heat can escape—have been minimized. A new configuration of electric resistances facilitates targeted heat generation, leading to potential energy consumption reductions of up to 40% compared to the previous generation gas-fired model.

The E-Bake G2 offers multiple heat transfer zone configurations. This versatility allows manufacturers to customize baking lines according to process needs, thermal profiles, and product types, thereby ensuring both thermal flexibility and reliability across modules.

Marco Girimondo, product manager at GEA, highlights that their ‘Voice of the Customer’ research indicates a growing interest in sustainable baking solutions, particularly in electric baking. However, customers often confront high operational costs due to energy tariffs and capital expenditure for plant infrastructure upgrades.

“The E-Bake G2 directly addresses these concerns by significantly lowering energy consumption and reducing both installed power and total cost of ownership compared to conventional electric ovens,” he emphasized.

This oven is engineered to deliver superior baking performance by mimicking a small-scale airflow circuit within each module. Therefore, this design allows for precise micro-control of airflow and uniform heat flux directed at the product surface. As a result, the system ensures consistent baking conditions in each zone, leading to repeatable results and measurable enhancements in critical-to-quality (CTQ) parameters such as texture, color, and moisture content.

The accessibility of the E-Bake G2 is improved with continuous access doors along the baking chamber. The base configuration features one access door per module, with an optional version that accommodates up to three doors per module.

The modular design enables fast, plug-and-play installation. Each module comes preassembled with its electric cabinet mounted on top, which eliminates the need for extensive on-site electrical wiring. This feature can reduce installation time by up to 70%, based on a reference 90-meter-long electric oven equipped with seven baking zones.

The E-Bake G2 incorporates GEA’s innovative Kinetic Edge machine design. This structural redesign utilizes 64% less iron in the frame and baking chamber, minimizing the total number of components and based on a standardized module that can be configured to order.
