Dawn Foods UK and Ireland has broadened its fond range, which provides cream stabilisation, with the launch of a new Matcha Fond. The company has also upgraded its strawberry and raspberry variants.

Although fonds have traditionally been associated with mousses and bavarois, Dawn has developed the range to support a wider selection of bakery and dessert applications. Manufacturers can use the products in panna cotta, cheesecakes, glazes, icings, meringues, layered desserts and filled bakery products. This versatility enables bakers to move beyond traditional formats and create more contemporary, premium concepts in line with evolving food and drink consumer trends.

The new Matcha Fond delivers matcha’s vivid green colour and distinctive earthy yet sweet flavour. Matcha-flavoured food and beverage launches increased by 23% in Europe between 2021 and 2025, according to Innova Market Insights’ Europe Food & Beverage Launch Data, 2021–2025. While the ingredient has achieved strong recognition in beverages, its popularity is now extending across bakery, confectionery and indulgent dessert categories.

This momentum reflects wider food and beverage industry trends, with major brands using matcha in products ranging from drinks and chocolate to doughnuts, cakes and cookies. The launch also highlights the role of food and drink industry innovation in responding to changing consumer preferences and creating new opportunities for product development.

Dawn Foods will simultaneously relaunch its strawberry and raspberry fonds with updated recipes. The improved formulations offer stronger fruit flavour, brighter colour and a greater inclusion of fruit pieces, helping manufacturers develop products with enhanced sensory appeal.
